- 175g portobello mushrooms
- 2 teaspoons olive oil
- 2 teaspoons fresh thyme
- 4 medium eggs lightly beaten
- 60g goats cheese crumbled
- oil spray

- preheat oven to 200u00b0c or 180u00b0c fan forced lightly spray 4 holes of a u00be cup 185ml capacity texas muffin tin with oil using a rolling pin flatten bread so it is large enough to line prepared holes place bread into prepared holes pressing to form a bread case
